Special Dark Chocolate Chip Cookies

A Classic Done Right

Makes 4 Dozen

Ingredients

  • Flour 300g 

  • Salt 4.5g

  • Baking Soda    

  • Butter, soft 14 oz (400 g)

  • Granulated Sugar 10 oz (280 g)

  • Light Brown Sugar 6.5 oz (180 g)

  • Eggs 6 oz (170 g)

  • Vanilla Extract 1 tsp (5 mL)

  • Chocolate Chunks 1 lb 5 oz (600g)

Directions

  1. Line a sheet pan with parchment paper

  2. Combine the flour, salt, and baking soda

  3. Cream the butter and sugars with the paddle attachment on medium speed, scraping the sides periodically, until the mixture is smooth and light in color. About 5 minutes.

  4. Combine the eggs and vanilla, add to the butter-sugar mixture and scraping down the sides as needed.

  5. On low speed, mix in the dry ingredients and the chocolate chunks just until incorporated.

  6. Portion and bake at 375 degrees Fahrenheit for about 12-14 min.  Cool completely on the pans.
